Grilled Corn and Tofu Salad doesn’t sound quite as patriotic as burgers or hot dogs for the 4th of July, but rest assured that between the two of us Sorin and I have already consumed two hamburgers, six sausages and some ribs during this long holiday weekend. The 4th of July always makes me crave grilled meat. This weekend is also the first weekend that really, truly feels like summer, which makes me crave grilled meat even more. The arrival of summer in L.A. is a strange thing, less about the temperature on the thermometer and more about a feeling in the air. We’ve had plenty of hot days already this year but this weekend you could finally feel the whole city slow down and unwind.

You wouldn’t know it by what we’ve been eating this weekend, but we are actually trying to consume less meat in our house. Mainly for health reasons, partially for financial reasons and also because I like the challenge of coming up with satisfying, vegetarian meals. That’s how tofu ended up being thrown on the grill one night. My grilled corn and tofu salad can be made just as easily with frozen, un-grilled corn and tofu that is left uncooked, which is probably how I’ll be making it during the fall and winter. In the summer though, I have an uncontrollable urge to throw pretty much everything on the grill and a little time over a hot flame does give both the corn and tofu a crunchy, smokey quality. This is a salad you can take to potlucks all summer long or happily pack in your lunch during the week.

We had no set plans for the 4th which might have meant a dull and disappointing holiday, but we lucked out and have ended up having one of those lovely days that was perfect in so many ways: a spur of the moment trip to the beach, no traffic on the freeway, a mini picnic, stumbling upon The Annenberg Public Beach House  where we lounged by a pool overlooking the ocean, sipping a perfectly brewed cup of coffee during the drive home (no traffic! again!) and now dinner at home as the sun sets. Little O is asleep (although probably not for long if the neighbors below us keeping lighting off illegal fire crackers) and we’re in for the night, hoping to catch a few glimpses of the fireworks show being set off a few miles away. All in all feeling happy, blessed and lucky to be living in this great country of ours. Happy 4th!
