Edamame & Feta Dip

1 cup frozen edamame beans
3 Tbsp olive oil
1/4 tsp salt
1/4  cup crumbled feta, plus more for garnish
squirt of fresh lemon juice

Cook beans for five minutes in boiling water. Drain and rinse in cold water. In a food processor blend beans and olive until fairly smooth. Add feta and a squirt of lemon juice and pulse a few more times. Liberally garnish with feta.

Tips:

  • Serve chilled with pita chips or toasted slices of baguette
  • Use as a spread on sandwiches or pizza
