Lentil Salsa

¾ cup dried green or brown lentils
2 tomatoes, diced
1/2 cup onion, diced
One 4oz can diced green chiles
1/4  cup roughly chopped cilantro
2 Tbsp lime juice
2 minced garlic cloves
1/2 tsp salt
1 tsp cumin
1 tsp coriander

Lentils are extremely healthy and really easy to cook. Rinse the lentils in a colander then put in a pot with 2 cups cold water and a dash of salt. Bring water to a boil, then turn heat down to a simmer. Cook for 15-20 minutes. Cooked lentils are soft  but not mushy. If you bite into one, it should still be slightly firm. Drain any remaining water in a colander, rinse and cool. Add to tomatoes, onion, chiles and cilantro.

Whisk together lime juice, garlic, salt, cumin and coriander. Pour over lentils.

Tips:

  • Serve lentil salsa with chips or as a side salad
  • Add minced jalepeno pepper to make it spicy
