Vodka Pasta

2 tbsp olive oil
3-4 garlic cloves, minced
1/2 tsp red pepper flakes
One 28 oz can of crushed or pureed tomatoes
1/4  cup  vodka
1/4 cup heavy cream
1/3 cup fresh parsley or basil, roughly chopped
1 lb. penne pasta

Put a pot of salted water on to boil for the pasta

In a deep pan over  medium heat, warm oil then add garlic and pepper flakes . Saute garlic just until it browns slightly then add tomatoes. Lower heat and add the vodka. Simmer until sauce begins to thicken, about fifteen minutes. While the sauce cooks, boil the noodles.

Drain the cooked noodles but don’t rinse. Add the pasta to the simmering sauce and mix well. Slowly add the cream, mixing well again. Turn off the heat and cover – let sit for 3-5 minutes. Add fresh herbs. Salt to taste.


  • Add mushrooms and saute them with the garlic
  • Add plenty of salt to the pasta water –  at least a tablespoon. It will help flavor the pasta and you won’t have to add as much salt to the sauce
