Asian Pear and Cabbage Slaw

Asian Pear and Cabbage Slaw

Ingredients:

3 cups shredded red cabbage (about 1/2 a small head of cabbage)
1 large Asian pear, sliced into sticks or thin wedges
2 Tbsp finely chopped mint
1/2 cup chopped pecans

Dressing:
2 Tbsp lime juice
1/4 cup soy sauce
1 tsp sugar
2 tsp canola oil
1/4 tsp red pepper flakes

Directions:

Combine the shredded cabbage, Asian pear, mint and pecans in a large bowl. Whisk together the dressing ingredients and drizzle on top. The dressing will liberally cover the salad – you can add another cup or so of cabbage and one more Asian pear for a larger salad and you’ll still have enough dressing.

Tips:

  • If you can’t find an Asian pear, use a regular pear or an apple instead. If you don’t like the idea of mixing fruit with cabbage, try using shredded carrot instead of fruit.
  • Push the bold flavors in this salad a little further by using candied pecans and a light garnish of blue cheese.
