Black Bean & Avocado Salad with Mango Dressing

This colorful and filling salad can be your entire dinner, especially if you add some protein – try grilled shrimp.  If you bring this salad to a party, wait to add the dressing until the last minute or leave it on the side.

Salad:

One 15-ounce can of black beans,drained and rinsed
2 ripe avocados, cut into small pieces
1 tomato, diced
1 red pepper, diced
1/2 cup roughly chopped cilantro
1 red onion, diced (optional)

Mix all ingredients in a large bowl

Dressing:

1 ripe mango, peeled
1/4 cup lime juice (about 2 limes)
1/2 cup olive oil
1 Tbsp minced garlic
1 jalapeno, minced
2 tsp ground cumin

Blend all ingredients in a food processor until smooth. Add salt to taste. Add dressing to salad right before serving , or serve on the side.

Tip:

  • Cilantro is a love it or hate it herb. If you hate it, try using parsley or mint instead.
