Simple Roasted Tomatoes


Roasted Cherry Tomatoes

Roasting cherry tomatoes makes them sweet and soft and the perfect topping for almost anything.

1 lb cherry tomatoes (any variety – sugar plum and sun golds are especially good)
1/4 cup olive oil
1 tsp dried oregano
1/4 tsp salt (or more, to taste)
1/4 cup minced fresh basil (or more, to taste)

In a rimmed baking pan, mix together tomatoes, olive oil, oregano and salt. Put under the broiler for 12-14 minutes, stirring every few minutes to make sure tomatoes don’t burn. The tomatoes will start to wither and pop open – you’ll actually hear them popping while they cook. Remove from oven and mix in fresh basil.

Total Recipe Time: 20 minutes
Servings: This is enough tomatoes to cover one pizza, put over pasta for three people or make at least a dozen slices of bruschetta. The recipe can easily be doubled or tripled.

  • Use roasted cherry tomatoes as a quick pasta sauce or pizza topping, or  spread on toasted chunks of bread for bruschetta. You can even just dip chunks of bread into the tomatoes. Or, let them cool and put the tomatoes over salad or mozzarella.
