Grilled Corn and Tofu Salad


4 ears of corn, husked (or 3-4 cups defrosted frozen corn)
1 block of firm or extra firm tofu
1/4 cup finely chopped chives or 1/2 cup chopped green onions
1 red pepper, diced or cut into strips
1 tablespoon + 2 teaspoons sesame oil
1/2 teaspoon salt
2 teaspoons honey
4 tablespoons soy sauce or tamari
3-4 tablespoons lemon juice
2 tablespoons mayo (optional)



Cut Tofu

Heat your grill to medium- high and make sure the grates are clean

Cut the block of tofu into 1/2 inch slices. Drizzle 1 tablespoon of sesame oil over the tofu, covering both sides, and sprinkle one side of tofu with salt.

Put the ears of corn and the tofu on the grill. Cook, covered, for five minutes then flip the tofu and roll the corn over. Cook the tofu for five minutes more then remove from the grill. The corn might  need a few more minutes more and should be turned once or twice more so each side browns deeply. Not every single kernel needs to be browned (see photo below).

Cut the grilled tofu into cubes. Shave the corn off the grilled ears (I use a serrated knife for this) and put the corn and tofu in a large bowl with the chives or green onions and red pepper.

Whisk together the remaining 2 teaspoons of sesame oil and the honey, soy sauce and lemon juice. Pour over the salad. Stir in the mayo, if desired. Add salt to taste.

Approximate Servings: 6 
Total Recipe Time: 25 minutes

  • Measure out the teaspoon of sesame oil for the dressing then measure the honey in the same teaspoon – the honey won’t stick because of the oil coating
  • I’m not a huge mayo fan, but it really does gives this salad a nice creaminess (don’t whisk the mayo with the dressing; add it separately)
