Oatmeal Olive Oil Cookies

You can taste the olive oil just a little bit in these relatively healthy cookies and it’s quite delicious with the oats.


1 cup old fashioned oats
1 cup whole wheat flour
1/4 cup brown sugar
1/4 teaspoon kosher salt
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 cup walnut pieces
1 teaspoon vanilla
1/2 cup olive oil
1/4 cup almond milk, soy milk or regular milk

Raw Oatmeal Olive Oil Dough


Preheat oven to 325

Stir together first 8 ingredients.

Add olive oil and mix well to cover oats. Then add milk and mix until it is all absorbed.

Scoop a tablespoon of dough onto a cookie sheet then gently press down with the palm of your hand to flatten it slightly. Repeat until all the dough is used.

Bake 12-15 minutes for a softer cookie, or longer for one with a more crumbly texture.

Servings: 12-14 small cookies
Recipe Time: 20-30 minutes

  • Add chocolate chips or dried fruit if you like
  • I tried making these as bars, but it didn’t work (too crumbly); cookies hold together better

    These are fantastic. I added mixed spice instead of just cinnamon and some dessicated coconut as had lots to use up!

    These cookies are awesome. added some dried cherries and dates and a tiny bit of almond extract because i used slivered almonds instead of walnuts(it’s what i had on hand). they were fantastic though. will definitely be a go to recipe. thank you.
