Roasted Allspice Potatoes

Allspice Potatoes

Allspice and cumin give roasted potatoes a whisper of exotic flavor.

3 pounds red potatoes, cut into quarters or eighths
1/4 cup olive oil
1 teaspoon allspice
1 teaspoon cumin
1 teaspoon salt
1/2 cup finely chopped parsley

Preheat oven to 400.

Place cut potatoes in a rimmed baking pan and drizzle evenly with olive oil. Sprinkle with spices, salt and parsley then mix well to evenly distribute flavor. Bake 45-55 minutes uncovered until potatoes are soft. Serve immediately.

Recipe Time: 1 hour 10 minutes
Approximate Servings: 4

  • If the potatoes start to burn before they are done, cover the pan with foil for the last part of baking.

    I never would have thought of roasting potatoes with allspice. Thanks for the inspiration! I also did caraway seeds and added the parsley at the end so it would stay fresh. Yum!
