Roasted Brussels Sprouts with Parsley

Brussels sprouts

A simple side dish, but one I dearly love. For a main dish, toss the cooked Brussels sprouts with pasta or serve on rice.

Ingredients:

1 pound of Brussels sprouts, cut in half or fourths
3 tablespoons olive oil
a big handful of fresh parsely, roughly chopped
salt to taste

Instructions:

Preheat oven to 400

In a baking pan toss sprouts and olive oil

Roast 30 minutes, only stirring once or twice. The edges of the sprouts should be browned, even inching towards burnt

Remove from oven and add parsley and salt to taste

Tips:
Approximate Servings: 2-4
Total Recipe time: 40 minutes
