Simple Ginger Broth

A simple broth for whatever ails you.

Ingredients:

3 cups broth, chicken or vegetable
1/4 to 1/2 cup peeled ginger root, sliced into thin matchsticks or rounds

Optional additions: spinach, mushrooms, snap peas, tofu, chicken, shrimp

Directions:

Bring the broth to a gentle boil and add ginger. Simmer for 10-15 minutes, until a spicy ginger flavor has infused into the broth. As the ginger softens, break it up a little with the edge of a spoon. Remove the ginger from the broth and add any additional ingredients and simmer until cooked.

Tips:

  • Dice the boiled ginger into small pieces and add some back to the broth or save it for another recipe, like sauteed vegetables or meat.
